Recipes

  We make 2 kinds of Italian Sausage – mild and spicy.  Cook on the grill, put in a bun, add peppers and onions, and you have a great summer time Italian sausage sandwich.  Cook our sausage in tomato sauce and pour it over your favorite pasta for lunch or dinner.   When the weather gets cooler, it is good in Jambalaya, in chili, and on pizza.  Anytime you use sausage in your recepies, use Graffeo Bros. Italian sausage to kick it up a notch!

Papardelle with Sausage and Peppers

Ingredients:

1/2 Pound Papardelle pasta

2 1/2 Pounds red and yellow peppers

3 1/2 Tablespoons butter

4 Tablespoons Extra virgin olive oil

1 Tablespoon peanut oil

1/2 White onion

1 Pound GRAFFEO BROS  SAUSAGE

(Mild or Hot)

2 1/2 Pounds Cherry Tomatoes

5 Fresh Basil Leaves

2 Pinches of Salt

1 Cup tomato sauce

Instructions:

   Cut peppers lengthwise in 1/2 inch slices and sautee in peanut oil for 10-15 min until soft.  Drain on paper towel to absorb excess oil.  In separate pan, melt butter and oil oil over low heat.  Add onion and cook until golden brown.  Add sausage and sear on all sides.  Cover pan and cook for 2 min.  Uncover pan and pierce sausage with fork.  Add peppers to pan and put sausage on top.  Add cherry tomatoes, basil, salt, and tomato sauce.  Cover and cook on low for 30 min.  Once cooked, remove sausage and cut into 1 inch slices and return to pan.  In a separate pot cook the pasta until "al dente", drain, add sauce and cook for an additional 2 min.

Garnish with parmesan or peccorino remano cheeses and "VOILA"!!



Pasta with Italian Sausage in tomato cream sauce

Ingredients:

1 Pound Graffeo Brothers Sausage

(Mild or Hot)

1 Medium Onion-chopped

2 Tablespoons Olive Oil

5 Pieces Proscuitto-cut into pieces (optional)

6 Cups heavy cream

1 Cup crushed tomatoes

1 Pound Pasta (Linguini, Spaghetti,

Fettuccini)

3 Tablespoons Fresh Basil

(Chifonade)

Instructions:

  Sautee Italian Sausage, Onion, and Proscuitto in Olive oil until sausage is done (approx. 10 minutes)  Add heavy

cream and reduce 5 minutes.  Add tomato sauce and Let simmer on low.

In a different pot cook the pasta according to the directions on the package.

Plate the pasta, add the sauce on top and garnish with Basil.  And "VOILA"!!
