Papardelle with Sausage and Peppers
Cut peppers lengthwise in 1/2 inch slices and sautee in peanut oil for 10-15 min until soft. Drain on paper towel to absorb excess oil. In separate pan, melt butter and oil oil over low heat. Add onion and cook until golden brown. Add sausage and sear on all sides. Cover pan and cook for 2 min. Uncover pan and pierce sausage with fork. Add peppers to pan and put sausage on top. Add cherry tomatoes, basil, salt, and tomato sauce. Cover and cook on low for 30 min. Once cooked, remove sausage and cut into 1 inch slices and return to pan.
